
Ingredients
- Basmati rice – 500 grams
- Onions – 3 medium sliced
- Green chilli -3 slit
- Shahi jeera -1 tsp
- Ginger garlic paste – 3 to 4 tsp
- Mint leaves- 1 cup
- Water ( for 1 cup rice I had 1.5 cups water) as needed
- Coriander leaves -1 cup
- salt as required
- Ghee – 3 tsp
- Oil – 3 tsp
- Bay leaf – 2
- Cinnamon Stick – 1 inch piece
- Cardamom – 2
- Cloves -4
- Cashew nuts few
Method
- Wash and soak the rice for 20 minutes to half an hour.
- Heat ghee and oil in a pressure cooker. Add cashew nuts, cinnamon, cloves, bay leaf , cardamom.
- Add onions and green chillies and sauté for few minutes.
- Now add the ginger garlic paste and sauté for 3 to 4 minutes.
- Now add the soaked rice and sauté for two minutes. Add the mint and coriander leaves.
- Add the water as mentioned and bring it to a boil . Close the cooker and cook for a whistle, then let it stay on sim for 5 minutes. Remove from gas and wait for the pressure to release. Yummy ghee rice is ready.
