Ghee rice

Ingredients

  • Basmati rice – 500 grams
  • Onions – 3 medium sliced
  • Green chilli -3 slit
  • Shahi jeera -1 tsp
  • Ginger garlic paste – 3 to 4 tsp
  • Mint leaves- 1 cup
  • Water ( for 1 cup rice I had 1.5 cups water) as needed
  • Coriander leaves -1 cup
  • salt as required
  • Ghee – 3 tsp
  • Oil – 3 tsp
  • Bay leaf – 2
  • Cinnamon Stick – 1 inch piece
  • Cardamom – 2
  • Cloves -4
  • Cashew nuts few

Method

  • Wash and soak the rice for 20 minutes to half an hour.
  • Heat ghee and oil in a pressure cooker. Add cashew nuts, cinnamon, cloves, bay leaf , cardamom.
  • Add onions and green chillies and sauté for few minutes.
  • Now add the ginger garlic paste and sauté for 3 to 4 minutes.
  • Now add the soaked rice and sauté for two minutes. Add the mint and coriander leaves.
  • Add the water as mentioned and bring it to a boil . Close the cooker and cook for a whistle, then let it stay on sim for 5 minutes. Remove from gas and wait for the pressure to release. Yummy ghee rice is ready.
