
Ingredients
- All purpose flour/ Maida – 1 cup or 250 grams
- Sugar – 1.5 tsp
- Baking powder- 1/2 tsp
- Baking soda – 1/4 tsp
- Curd- 2 tbsp
- Ghee- 1/4 cup
- Water as required
- Pistachios/Pista- few chopped for garnishing
Sugar syrup
- Sugar- 1 cup/ 250 grams
- Water- 3/4 cup
- Cardamom powder- 1/4 tsp
- Lemon juice- 1/2 tsp
Method
- In a mixing bowl, add all purpose flour, sugar 1.5 tsp,baking powder,baking soda, curd, ghee and mix well.
- Sprinkle water gradually and mix to form a soft dough. Cover the dough and let it rest for 15 minutes.
- Meanwhile you can start making the sugar syrup.
- In a saucepan add the sugar and water and allow it to dissolve on medium heat.
- Keep stirring until the sugar syrup thickens lightly. It should reach one string consistency.
- Add cardamom powder. Mix well. Turn off the gas and add lemon juice.
- Take the dough, make small sized balls and start rolling each ball between your palms .a
- Now flatten the ball and make a depression in the centre using your thumb. Repeat for all the balls.

9. Heat oil in a pan, drop in the badushas and deep fry them on low heat. It takes 12 to 15 minutes to get golden brown on both sides.
10. Remove the badushas and put them into the sugar syrup immediately.
11. Let the badushas soak in the syrup for 5 minutes. Two and half minutes on either side.
12. Remove and serve.
