Egg Vindaloo

Ingredients

  • Boiled Eggs- 5
  • Onions- 2 medium sized finely chopped
  • Green chilli- 1-2 slit
  • Tomatoes- 3 medium sized finely chopped
  • Ginger garlic paste- 1 tsp
  • Turmeric powder – 1/2 tsp
  • Chilli powder- 1.5-2 tsp
  • Vinegar – 1 tsp
  • Curry leaves – 2 sprigs
  • Oil – 3 tbsp
  • Salt as required

Method

  1. Heat oil in a pan.
  2. Add chopped onions, curry leaves and green chilli. Sauté for 3 minutes.
  3. Add ginger garlic paste and sauté for 2 minutes.
  4. Add the chopped tomatoes and sauté for another 2 to 3 minutes.
  5. Add salt,turmeric powder and chilli powder and mix well. Let the masala cook for 3 to 4 minutes.
  6. Add vinegar and 2 to 3 tbsp of water and let it simmer for 3 minutes.
  7. Slit the boiled eggs and drop them into the masala. Mix the masala and let it simmer for 4 minutes.
  8. Egg Vindaloo is ready to be served.
