
Ingredients
- Boiled Eggs- 5
- Onions- 2 medium sized finely chopped
- Green chilli- 1-2 slit
- Tomatoes- 3 medium sized finely chopped
- Ginger garlic paste- 1 tsp
- Turmeric powder – 1/2 tsp
- Chilli powder- 1.5-2 tsp
- Vinegar – 1 tsp
- Curry leaves – 2 sprigs
- Oil – 3 tbsp
- Salt as required
Method
- Heat oil in a pan.
- Add chopped onions, curry leaves and green chilli. Sauté for 3 minutes.
- Add ginger garlic paste and sauté for 2 minutes.
- Add the chopped tomatoes and sauté for another 2 to 3 minutes.
- Add salt,turmeric powder and chilli powder and mix well. Let the masala cook for 3 to 4 minutes.
- Add vinegar and 2 to 3 tbsp of water and let it simmer for 3 minutes.
- Slit the boiled eggs and drop them into the masala. Mix the masala and let it simmer for 4 minutes.
- Egg Vindaloo is ready to be served.
