Vegetable Pulao

Ingredients

  • Basmati rice- 2 cups or 500 grams
  • Onions -3 chopped
  • Tomatoes – 2 medium sized chopped
  • Green chillies- 3 slit
  • Ginger garlic paste- 2.5 tsp
  • Carrot – 1
  • Beans- 1/4 cup chopped
  • Peas 1/4 cup
  • Pepper powder- 1 to 1.5 tsp
  • Water- 3 cups (for 1 cup rice add 1.5 cups of water water )
  • Cinnamon- 2 inch
  • Cloves- 4
  • Cardamoms- 3
  • Oil- 5 tbsp

Method

  1. Wash and soak the rice for 20 minutes. Drain the water and keep aside.
  2. In a pressure cooker heat oil, add the whole spices(Cinnamon , cloves, cardamoms) and sauté for 20 – 30 seconds.
  3. Add chopped onions, green chillies and sauté until the onions turn light brown.
  4. Add ginger garlic paste and sauté for 2 minutes.
  5. Add chopped tomatoes and sauté for another 2 minutes.
  6. Add the chopped vegetables,salt, pepper powder and stir fry for 3 to 4 minutes.
  7. Now add the rice and mix well for a minute.
  8. Add 3 cups of water and mix well.
  9. Close the cooker and cook on medium flame for 2 whistles. Turn off gas and remove the cooker and keep aside.
  10. Once the pressure is released, open the cooker and mix gently. Serve
