Yam and Drumstick Curry

Ingredients

  • Yam- 1 cup and chopped
  • Drumsticks – 2
  • Onions-2 roughly chopped
  • Tomatoes -3 roughly chopped
  • Ginger garlic paste- 1 tsp
  • Green chilli- 1 slit
  • Curry leaves – 2 sprigs
  • Turmeric powder- 1/2 tsp
  • Chilli powder- 1.5 tsp
  • Coriander powder – 2.5 tsp
  • Garam masala – 1 tsp
  • Oil- 5 tsp
  • Water- 3 cups or as required
  • Salt as required

Grind to paste

  • Coconut- 1/3 cup ( remove the brown part and cut into small pieces )
  • Red chilli- 1

Method

  1. Heat oil in a pressure cooker. Add curry leaves,chopped onions and green chilli. Sauté for 2 minutes.
  2. Add ginger garlic paste and sauté for 2 minutes.
  3. Add chopped tomatoes and sauté for 2 to 3 minutes.
  4. Add turmeric powder, chilli powder,coriander powder and garam masala and mix well.
  5. After 3 minutes add the chopped yam and stir well with the masala.
  6. Sauté for 3 minutes.
  7. Add salt and the ground coconut paste.
  8. Add water and mix well.
  9. Close the cooker and pressure cook for 4 whistles.
  10. Wait for 5 minutes, open the cooker and add the chopped drumstick.
  11. If the gravy is too thick add 1/2 cup water and pressure cook for 1 whistle.
  12. Wait until pressure releases. Serve
