
Ingredients
For the omelette
- Eggs- 4
- Onion- 1 finely chopped
- Pepper powder- 1 tsp
- Coriander leaves -3 tsp finely chopped
- Sat as required
- Oil as required
For the masala
- Onions- 2 finely chopped
- Ginger garlic paste- 1 tsp
- Tomatoes- 3 finely chopped
- Turmeric powder- 1/2 tsp
- Kashmiri Chilli powder- 2 tsp
- Curry leaves- 2 sprigs
- Water – 1 cup (250 ml)
- Salt as required
- Oil-4 tbsp
Method
First start preparing the masala
- Heat oil in a pan. Add curry leaves, chopped onions and sauté for 2 minutes.
- Add ginger garlic paste and sauté for 2 to 3 minutes.
- Add chopped tomatoes, required salt and mix well. Sauté the masala for 3 minutes.
- Now add turmeric powder and chilli powder. Mix well to combine.
- Add 1 cup water and mix the masala. Cook on low flame.
- Meanwhile start preparing the egg omelettes.
- In a bowl, break in the eggs and add chopped onion, pepper powder, salt and coriander leaves and beat well.
- Take a pan , add 1/2 tsp oil and pour in a ladle of the beaten egg mixture. Fry on both sides. If you want , cut the omelette into two and set aside.
- Repeat step 8 until you have made all the omelettes.
- Drop the omelettes into the masala and stir slowly.
- Let the masala cook for 3 minutes. Turn off gas. Serve
