Egg Omelette Tomato Masala

Ingredients

For the omelette

  • Eggs- 4
  • Onion- 1 finely chopped
  • Pepper powder- 1 tsp
  • Coriander leaves -3 tsp finely chopped
  • Sat as required
  • Oil as required

For the masala

  • Onions- 2 finely chopped
  • Ginger garlic paste- 1 tsp
  • Tomatoes- 3 finely chopped
  • Turmeric powder- 1/2 tsp
  • Kashmiri Chilli powder- 2 tsp
  • Curry leaves- 2 sprigs
  • Water – 1 cup (250 ml)
  • Salt as required
  • Oil-4 tbsp

Method

First start preparing the masala

  1. Heat oil in a pan. Add curry leaves, chopped onions and sauté for 2 minutes.
  2. Add ginger garlic paste and sauté for 2 to 3 minutes.
  3. Add chopped tomatoes, required salt and mix well. Sauté the masala for 3 minutes.
  4. Now add turmeric powder and chilli powder. Mix well to combine.
  5. Add 1 cup water and mix the masala. Cook on low flame.
  6. Meanwhile start preparing the egg omelettes.
  7. In a bowl, break in the eggs and add chopped onion, pepper powder, salt and coriander leaves and beat well.
  8. Take a pan , add 1/2 tsp oil and pour in a ladle of the beaten egg mixture. Fry on both sides. If you want , cut the omelette into two and set aside.
  9. Repeat step 8 until you have made all the omelettes.
  10. Drop the omelettes into the masala and stir slowly.
  11. Let the masala cook for 3 minutes. Turn off gas. Serve
